Lychee Lime Mint Sorbet Recipe
Lychee are one of my all-time favourite fruits. Fresh is better than canned, but I found a dusty can in the back of my pantry and decided to make some easy lychee sorbet.

Sometimes I feel like I can exist strictly on cold food in the summer, so I tend to eat a lot of fruit and vegetables out of hand. One of my favourites has to be the tomato. Tomatoes in the summertime taste completely different from their wintertime cousins. Sweeter, juicer, more tomatoey, summer is the perfect time for simple tomato salads.
Summertime means sun-drenched patios and pitchers of refreshing, thirst quenching cocktails. One of my favourite places for cocktails is Guu, a local chain of Japanese izakayas. I really like Japanese cocktails-they tend to be lighter on the alcohol and there’s a big focus on fresh flavours.
Note: I refer to “spring rolls” as salad rolls.
I’ve rolled (and eaten!) a lot of salad rolls in my life. There’s definitely a technique to it and the more you roll, the better you get. I love eating salad rolls, mostly because I find the do-it-yourselfness of it completely satisfying. You can customize your roll whatever way you want and really, even if you’re not a very good roller, it doesn’t matter because you’re the one who’s going to eat it!
