Sometimes leftovers are the best part of a good meal – you can go to sleep happy, knowing that something delicious awaits you the next day. Some leftovers are more versatile than others, but generally, the minimal amount of effort you need to put in to make something new is amazing.

Momofuku Ko is Chang’s tiny 12 seat, impossible-to-get reservations only, no menu, omakase-style restaurant created to showcase technique. Last summer, I had the chance to take three hours out of my day to have the Ko lunch menu, and if someone told me I’d be attempting to create their plates of perfection, I would have fallen over laughing.
There was a time in my life when I ate oyakodons for lunch every day. I didn’t get sick of them, in fact, the more I ate them, the more I craved them. I would be in a lecture, (not) listening to the professor, and thinking about the oyakodon I would soon be eating. The oyakondons were not particularly good, in fact, they weren’t; I was just obsessed.
