I have a deep, deep love for breakfast foods. In fact, as a child, my diet consisted mostly of cereal and eggo waffles. Now that I’m older and more versed in the waffles of the world, my waffle of preference is between Belgian and Leige. Leige waffles have the added plus of being studded with pearl sugar, but Belgian waffles are light, crisp and oh-so-large.
Nothing beats homemade waffles on a rainy Sunday, especially Belgian style waffles topped with bananas foster. I figure, if you can have mimosas at Sunday brunch, why not have booze soaked bananas as well? Just make sure the person making the bananas foster is completely sober, because 1 foot high flames when you’re slightly tipsy can be an issue.
Bananas foster is one of my absolute favourite desserts, especially with a scoop of vanilla bean-flecked ice cream. It’s super simple to make and the result is fabulous: warm, cinnamon speckled bananas bathed in a rich caramel rum sauce.
If you’ve never had bananas foster and you’re not keen on starting a fire in your kitchen, you can make the recipe without lighting the rum on fire; just let the sauce cook off for a while until it’s thick and syrupy.
Bananas Foster Recipe
2 tablespoons butter
2 tablespoons brown sugar
2 tablespoons rum
1/4 teaspoon cinnamon
Melt butter in a medium saucepan over medium heat. While the butter is melting, slice the bananas. When the butter is melted, add the brown sugar and cinnamon and stir to dissolve the sugar. When the mixture is bubbling at the edges, add the bananas and stir to coat. Let the bananas cook in the syrup for a minute then remove them from the pan. Add the rum and carefully light the rum on fire by using a matchstick at least 10 to 12 inches long. Make sure your face is not anywhere near the pan. The fire will burn for about 2 minutes. After the fire burns out, stir the sauce and use as syrup for the waffles.

1/2 cup flour
2 teaspoons sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
pinch of salt
1/2 cup milk
1 1/2 tablespoons melted butter
1 egg white
Preheat your waffle iron.
In a bowl, mix together the dry ingredients. In another bowl, whisk together the melted butter, milk and egg white. Add the wet ingredients to the dry, stirring until just combined.
Using a 1/2 cup dry measuring cup, scoop a rounded 1/2 cup of batter onto the waffle mold. Cook according to your waffle iron.
Top the waffles with bananas and drizzle with the bananas foster syrup.
