Out of the many reasons why I love my mom, one of the tastiest is that she always seems to have avocados at home in various stages of ripening. I think I inherited a love of avocados from her. I love the creamy texture of a perfectly ripe avocado. Sometimes I’ll just eat them out of hand, they’re that good. To me, avocados are super-rich and almost meaty.
When you pair avocados with umami-packed tomatoes, you know you’re going to get a good sandwich. The juiciness of the tomatoes, the butteriness of the avocados and the crispiness of the bread together melts in your mouth.
I like to put the pesto on the outside of the sandwich and grill it in a non-stick pan. The pine nuts toast a little, the garlic becomes a bit more mild and the cheese melts into a pleasingly crunchy crust.
Tomato Avocado Pesto Sandwich Recipe
2 slices of bread
1/2 ripe avocado, sliced
1 tomato, sliced
salt and pepper to taste
Spread the pesto on the slices of bread and put the slices pesto-side down on your cutting board or work surface. Layer one slice of bread with avocado and the other slice with tomatoes. Season to taste. Put the sandwich together and pan-fry in a non-stick pan over medium heat until the pesto turns a pleasing golden brown. Enjoy!
