I first saw berramisu on YouTube from Working Class Foodies.
The reason dead bivalves are bad is because it is high in protein and low in acid, an environment bacteria love.
Or so I have been told, but fish is sold dead unless you are in an Asian food store. I do know that blood is somewhat acidic, so that may explain the difference.
