The kitchen mentality at Ko is “make it soigné,” which means make it perfect. Ko was and is Chang’s chance to showcase technique. No menu, no options, the ultimate omakase. This is by far the most technique laden of the three chapters: it will be my first time making consommé and foie gras torchon. Wish me luck!
