Having a crisis over raw pig heads
I don’t think I can do the pig’s head torchon. The pig head photo in the book is alright because the head is cooked, but raw pig heads makes me feel ill. I really don’t think I can do it…
…but it looks so good when it’s done!




Hi, just discovered your blog. Cheers to another Momofuku fan from Vancouver! (I only first visited Momofuku Noodle Bar last year, but I hope to make more trips.)
I’ve seen Windsor Meats on Main & King Edward display halved pig’s heads in the window, for what it’s worth.
